Hearty Chicken Spiced Bean Soup

Last weekend we had our first crisp autumn morning. It was wonderful, cool air, birds singing, not sweating before 9am. Cool weather, how I’ve missed you. So in celebration I made the perfect cool-weather dinner: soup

And what a soup this is. Rich and hearty, but not heavy. The perfect amount of beans to paprika spiced chicken, topped with cheese slowly melting and coriander…food like this is yet another reason why I need to move to somewhere where its winter all year round. 

Seriously, is there anything better than the smell of frying onion wafting through the house? Oh comfort food, how I’ve missed you.

This soup is based on this chilli from How Sweet it is, but I changed it to make it more of a soup than a chilli, and also to shorten the cooking time because I was hungry, and trust me, with the smell of this soup drifting from the kitchen you would be hungry too.

Hearty Chicken Spiced Bean Soup
(based on smokey white bean chicken chilli from how sweet it is)

Ingredients:

  • 1 tbsp olive oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp onion flakes
  • 5 cups chicken stock
  • 1 can diced tomatoes
  • 4 400g cans of beans, drained (I used 2 butter bean, 1 berlotti and 1 chickpeas)
  • 1 green capsicum, chopped
  • 2 green chilli, chopped, seeds removed
  • Salt and pepper to taste (I barely used any because the stock was quite salty)
  • Cheese and coriander for topping

Method:

  1. Fry onion and garlic in olive oil in a Dutch oven
  2. Add chicken and spices, cover and cook on low heat for 5 minutes
  3. Stir in stock, tomatoes, beans, capsicum and chilli. Season
  4. Bring to a soft boil and cook uncovered, stirring occasionally until you’re happy with how much it has reduced. (For me this was about 10-15 minutes)
  5. Top with cheese and coriander


You could have it with bread if you wanted, but we found it plenty without it because of all those beans, but we weren’t so full that we couldn’t enjoy dessert (more on that tomorrow though 😉 )
