Pastry Wrapped Caramel Apples

Mum thought that she had found the first of the new season’s Granny Smiths. However, they turned out to be the last of the old season’s. Meaning they were tart. Very very tart. Which means that they were perfect for baking šŸ˜€

Everything about this recipe is great. The perfectly cooked apple filled with creamy caramel sauce, coated in cinnamon sugar and encased in crispy puff pastry. However, the absolute best part of this recipe is theĀ hazelnutĀ cream. It’s just such a complex flavour, which compliments perfectly with the sweet of the apple.

Pastry Wrapped Caramel Apples With Hazelnut Cream
(adapted from that skinny chick can bake)


  • 1 cup cream
  • 25g coconut
  • 1 tbsp sugar
  1. RoastĀ hazelnutsĀ at 175Ā Celsius or until fragrant
  2. Remove skins (as best you can) and chop finely
  3. Add to cream and heat until almost boiling
  4. Allow to cool to room temperature and then chill for 3-4 hours
  5. Strain and whip before serving

Caramel Sauce

  • 1 cup cream
  • 110g sugar

  1. heat sugar on stovetop without stirring until melts and turns a golden colour
  2. Heat the cream until almost boiling while melting sugar, and add to the caramel. It will hiss and spit so be ready for that
  3. Stir on the heat until well combined, then cool

The Apples

  • 2 tbsp cinnamon sugar
  • 1 egg
  • 1 tbsp water
  • 4 granny smith apples peeled
  • puff pastry

  1. Beat the egg and water together
  2. Peel the apples and remove the cores, leaving the bottom of the apple intact. Harder than it sounds, but it doesn’t matter if you don’t get it 100% perfect
  3. Coat the apples with the cinnamon mixture
  4. Spoon cinnamon sauce into the wells inside the apples
  5. Cut the pastry into strips and wrap around apples (see pictures below). Use extra bits of pastry to make leaves.
  6. Bake at 175 degrees for 25-35 minutes, or until pastry is browned and apples are cooked through
  7. Serve with hazelnut cream and extra caramel sauce
