Brown Butter Orange Tea Cake

I finally managed to work up the courage to go to my university’s baking club. But there were some problems I encountered when trying to choose this recipe:

  1. It has to taste delicious
  2. It has to look incredible
  3. It has to be quick to make because I didn’t have much time in the middle of the week
  4. It had to fit the theme of “multicultural week”

Luckily this “Swedish visiting cake” does just that 🙂

This cake, originally a “Swedish Visiting Cake” was simple, delicious, simple and did I mention delicious? The complex flour of the brown butter combines surprisingly well with the orange flavour, and the moist texture of the cake contrasts perfectly with the crunchy almonds on top.

Brown Butter Orange Tea Cake
(adapted from The Pastry Affair’s Swedish Visiting Cake)

Ingredients:

  • 115g butter
  • 1 cup sugar
  • 2 eggs
  • pinch salt
  • 2 tsp vanilla extract (I used 1tsp vanilla bean paste)
  • 1 cup plain flour
  • 1/3 cup slivered almonds
  • zest of 1 orange

Method:

  1. Preheat oven to 175 degrees
  2. Place butter in small saucepan on a medium heat until browned, then pour into small bowl so it doesn’t keep cooking
  3. Mix sugar and orange zest in a separate bowl, add the eggs one at a time
  4. Stir in salt and vanilla
  5. Stir in flour and melted butter incrementally
  6. Pour into well-greased 9 inch cake pan
  7. Scatter almonds and extra sugar over the top
  8. Bake for 25-30 minutes until brown on top
  9. Let cool for 5 minutes in pan
  10. You should probably wait until it’s cool before slicing, but it is delicious while still warm with a smear of salted butter

It was also amazing to try all the interesting recipes from different cultures 🙂
